Pattern Welded Steel Knife
This chef knife comes with a XC100 high-carbon steel core and an additional 100 layers of pattern welded steel. Also known as “Damascus steel”, pattern welded knives ensure the perfect combination of durability and eye-pleasing appearance. Both knives are perfectly balanced thanks to the full tang design (the chef’s knife weighing only 210 g / 0.46 lbs) which makes them easy to handle and therefore suitable for daily kitchen use.
Traditionally Hammer-Forged
Crafted using traditional blacksmith methods, the blades are particularly sturdy. Our pattern welded chef’s knife is carefully heat-treated to achieve a hardness of ~61 HRC (Rockwell hardness) which is the highest category of blade steel hardness a knife can have.
Sturdy and Durable Handle
Both blade and handle are key to a long lasting knife. The handle of the chef’s knife and its little matching companion are made from exquisite rosewood. The looks and handling of the knives are very good.
I was dissapointed by how sharp the knives were. As a comparison they were much less sharp than a set of Japanese knives which had the same price for 7 pieces as I paid for these 2.
Moreover the knives were a bit less sharp than the ones I’ve been using for 4 years from Villeroy & Boch, again much less expensive than these.
In conclusion if you buy them for the looks they’re fine but for me they were a dissapointment
